Florentine is a type of dish, originally from French haute cuisine, that incorporates cooked spinach, a protein, and Mornay sauce. In modern usage, it frequently simply indicates a dish that incorporates spinach. It is not to be confused with Florentine biscuit, which are a nut and fruit cookie.
