An éclade de moules (or églade de moules) is a French mussel roast, a tradition of the Charentes region. Mussels are arranged in concentric circles on a wooden plank soaked in seawater, with the hinged part of their shells facing up, and are then covered with pine needles which are set alight. The mussels are infused with pine smoke, and are then eaten directly from the shell with bread, butter, and white wine.
