Dominostein (German, "domino stone") is a traditional German confection, particularly popular during the Christmas season. It is made up of several layers: typically, a base layer of lebkuchen (gingerbread), a middle layer of jelly (often apricot or cherry), and a top layer of marzipan or persipan (a similar almond paste substitute made from apricot kernels). These layers are coated in dark or milk chocolate, creating a small, square-shaped treat.
Dominosteine were invented in the 1930s by Herbert Wendler in Dresden as a more affordable version of pralines during wartime, and they have since become a staple of German Christmas confections.
