Deulkkae-garu is the toasted and ground seed of the perilla plant. It is used in Korean cuisine as a spice and condiment for soups and namul seasoned vegetable dishes, with guksu noodle dishes, or as a gomul (topping) for desserts, such as yeot and tteok rice cakes.
