Dehydrated coconut is a finely ground coconut meat product that is then dried. It retains the fiber and fat of the coconut and can be rehydrated in a variety of dishes. It is not a substitute for coconut flour, which contains much less fat, and is not an exact substitute for shredded coconut, which is considerably moister and is often sweetened.
