Cushaw pie is a traditional Appalachian sweet vegetable custard pie, made with Cushaw squash. These squash are cultivated extensively throughout the Appalachian region, and grow to tremendous size — thirty inches long, and twenty pounds each — leading to a large number of regional dishes to work through the autumn harvest.
Cushaw pie is a common Thanksgiving recipe, serving a similar place as pumpkin pie. The most traditional recipes use buttermilk and sorghum syrup.
