Cucuzza, or Sicilian summer squash, is a variety of squash common in Sicily and Palermo. The tender greens and shoots of cucuzza are harvested and sold as tenerumi, and are a key ingredient in pasta con tenerumi. Botanically, cucuzza is a subtype of calabash.
