Colbert sauce is a French sauce made with minced shallots, crushed black peppercorns, white white, and demi-glace, which is gently simmered and reduced, and then finished with softened butter, herbs and lemon juice. It is a standard sauce of French haute cuisine, often served with meat, poultry, or fish.
