Chicken suprême is a French term for boneless chicken breast; in French, the term suprême de volaille is often used. It comes from the French practice of using "suprême" to refer to the best part of a food.
If the humerus bone of the wing remains attached, the cut is called "chicken cutlet" (côtelette de volaille).
