Brillat-Savarin is a soft, triple creme French cow's milk cheese, with a blooming, edible rind. It was originally named Excelsior when it was created in the 1890's, but was renamed Brillat-Savarin in honor of Jean Anthelme Brillat-Savarin in the 1930s.
The French cheesemaking company Rouzaire produces an aged Brillat-Savarin under the name Pierre Robert.
