Baijiu is a clear distilled grain liquor, most popular in China. It is usually distilled from fermented sorghum, but rice, wheat, barley, or millet may be added to the mash. It may be sold in a wide range of alcohol levels, ranging from 28 to 65% alcohol by volume (ABV).
Baijiu is categorized into four major types by aroma:
  • Qingxiang, "light aroma"
  • Mixiang, "rice aroma"
  • Nongxiang, "strong aroma"
  • Jiangxian, "sauce aroma"
