Armadillo egg is a humorously titled appetizer, made by stuffing a jalepeno pepper with cheese, wrapping it in sausage, and then baking or smoking them.
When the meat coating is not present, they are usually called jalapeño poppers. The sausage technique is similar to that used for Scotch Egg.
