Anglesey Eggs is a British dish of hard-boiled eggs in a leek and potato mash, covered with cheese, which is browned under the broiler. It was originally a Welsh dish, called wyau ynys môn, thought to be created with local Caerphilly cheese, and using leeks, one of the few vegetables that could be grown in Wales.
