Aginares a la Polita is a Greek dish of artichokes, carrots, onions, and other vegetables poached in olive oil and water. The "a la Polita" in the name refers to the Greek tradition of referring to Constantinoupolis, which is now Istanbul, simply as "the city". The name can therefore be read as "Artichokes city-style."
