A acidulant is a substance that contributes a sour, tart, or acidic flavor to foods. They can also act as leaveners and emulsifiers. Typical acidulants are acetic acid, citric acid, phosphoric acid, and malic acid. Less commonly, fumaric acid, tartaric acid, lactic acid and gluconic acid can be used.
