À l'Andalouse is a term in classical French cooking for preparations characterized, most importantly, by the use of tomatoes. Such preparations may also include sweet peppers, chipolata, eggplants, and rice. It derives from Andalusia, the southernmost region of Spain, where high-quality ingredients of these types are found.
