Yopará, or jopara kesu, is a stew from the Guarani-speaking regions of Argentina and Paraguay. It is made with a mixture of hominy, beans, onions, garlic, and peppers, and is traditionally cooked on October 1st for good luck and to scare away "Karai Octubre," a mythical bringer of bad fortune.
