Yibin yacai, or simply yacai (芽菜), is a pickled vegetable originating from the Sichuan province of China. It is made from the upper stems of a variety of mustard green. Yacai is more pungent than the similar zha cai.
The name derives from Yibin, the name of the county where it is made, and yacai, meaning pickled vegetables. The mustard green used in its production is called jièmòcài (芥茉菜).
Yibin yacai is a defining ingredient in Sichuan classic dishes including dan dan noodles and gan bian si ji dou (dry-fried green beans).
