Wiped clean

Wiped clean, in a recipe, usually of mushrooms , indicates that grit and mulch should be wiped from the item using a damp cloth or towel. The goal is typically to avoid immersion in water, especially of mushrooms which would absorb much of the water and release it later during cooking.
