They have dense, firm flesh that ranges from mild to sweet and tends to be somewhat floury when cooked. They are classified as part of the Kabocha species of squashes, and are available in many commercial cultivars, including Turk's Turban, French Turban, Mexican Hat, Turk's Cap, American Turban, and Marina di Chioggia.
