The Thai Pumpkin is a medium to large pumpkin, with skin that starts a dark green and matures to an light brown, and dense, bright orange-yellow flesh. They have a smooth, sweet, and creamy flesh when cooked and are well suited to many recipes calling for pumpkin or butternut squash. In Thailand they are commonly used for Thai pumpkin custard.
