Su renkon is a Japanese preparation of pickled sliced lotus root. Most recipes use a brine of rice vinegar, sugar, salt, mirin, and, optionally, red chili pepper.
Su renkon is a traditionally auspicious dish for the Japanese New Year, because it is believed to symbolize a clear and unobstructed view of the future due to its circular holes.
