Green papaya salad is a spicy salad made from shredded unripe papaya. It was possibly created by the Lao people but is eaten throughout Continental Southeast Asia, Xishuangbanna, and considered a national dish in both Laos and Thailand.
CNN included a variation on their list of the World's 50 most delicious foods.
