Semi-hard cheeses are those cheeses that are packed under more pressure, and given more time to age, but are still soft enough to be cut with a knife and served in slices (unlike hard cheeses). Cheddar, Cheshire, Gloucester, Colby, Monterey Jack, Edam, and Gouda are examples of this type.
