Rumaki or rumake is an hors d'oeuvre, usually made with water chestnuts and chicken liver wrapped in bacon, marinated in sweetened soy sauce, and then fried or baked. The dish originated in the Tiki bar culture of Trader Vic's and related Polynesian restaurants in the 1950s and 1960s.
