The rind of a cheese is the outer layer, or skin, of the cheese that grows on the cheese as it ripens. It may be soft and bendable, or hard. Generally the older a cheese is, the more prominent the rind becomes.
Some types of cheese, especially those made with Penicillium camemberti, develop a bloomy rind, which is soft and fluffy.
