Pepper soup is a traditional Nigerian soup, incorporating complex spice and herb flavors and available meats or fish. The name is misleading; many spices are incorporated and pepper does not necessarily take a prominent role. A typical pepper soup will include erhe (calabash nutmeg), urheri (grains of Selim), alligator pepper (grains of paradise), and umilo (cocoplum), along with chicken, goat, or cow's foot; offal; or fresh tilapia, catfish, croaker, or snapper.
