Pedro Ximénez sherry is a Spanish fortified wine produced primarily in the Andalucía region, particularly within the D.O. Jerez-Xérès-Sherry. It is made from the white Pedro Ximénez grape, which is traditionally sun-dried on mats to concentrate sugars before fermentation. The resulting must is fortified with grape spirit and aged using the solera system, often in American oak casks.
Pedro Ximénez sherry is characterized by its dark, almost opaque color, high viscosity, and intense sweetness, often exhibiting flavors of raisins, figs, molasses, and caramel. It is used both as a dessert wine and as an ingredient in sauces and reductions in Spanish cuisine.
