Panocha is a Lenten pudding in American states of New Mexico and Colorado, made with ground sprouted wheat and piloncillo, or simply the sprouted-wheat flour itself.
In southern Arizona, and the Mexican states of Sonora and Sinaloa, it is another word for piloncillo.
