Noble rot (Botrytis cinerea) is a gray fungus that grows on wine grapes. If the fungus is allowed to grow in wet conditions, it produces unpalatable changes in the resulting wine. But if the grape is exposed to the fungus when it is ripe and then partially dried, the resulting wine is sweet and concentrated. See botrytized wine.
