Mucilage is a thick gluey substance produced by nearly all plants and some microorganisms. In cooking, mucilage is a powerful thickener and emulsifier. It is a major component of filé powder, used to thicken gumbo, and molokhia leaves, used across North Africa and the Middle East. It is also present in mustard seeds and chia seeds.
