Melezitose is a non-reducing trisaccharide composed of two glucose units and one fructose unit. It is commonly found in honeydew, the sugary excretion of aphids and other sap-feeding insects, as well as in the sap of certain plants, such as conifers. Melezitose is notable for its crystallization properties, which can result in granulated textures in honey. It is hydrolyzed by the enzyme α-glucosidase into glucose and turanose.
