Manhattan Pudding is an early 20th-century dessert pudding, made with the juices of oranges and lemons, cream, and walnuts. It was chilled in ice and salt before service, in an example of a pre-refrigeration cold dessert.
MANHATTAN PUDDING

4 oranges
2 lemons
1 cup chopped walnut meats
1 pt. heavy cream
Sugar to taste
Mix juice of oranges and lemons and sweeten to taste.
Whip heavy cream, add walnut meats, sweeten and flavor to taste.
Fill mold with mixture. Pack in ice and salt and let stand 3 hours.
