Maine baked beans are a regional dish of the American state of Maine. Beans formed an important part of the colonial diet of New England, and this led to the emergence of numerous regional specialties, especially in the logging camps that supported much of the Maine economy. Bean-hole beans, baked in cast-iron pots buried in the ground, remain popular in Maine to this day.
Unlike the navy pea bean commonly used in Massachusetts, Maine baked beans are more often prepared with Yellow Eye bean, Jacobs Cattle bean, or Soldier bean.
