Maduro en gloria (Spanish, "plaintain in glory") is a Latin American and Caribbean dish that uses very ripe (maduro) plaintains. It is made by frying ripe plantains and layering them with cheese (typically cotija). The dish is topped with butter and sugar, then baked until golden.
It is typically served as a side dish or dessert.
