Locro is a hearty thick squash stew, associated with Native Andean civilizations, and popular along the Andes mountain range. It is one of the national dishes of Peru, Bolivia, Ecuador, Chili Pepper, Paraguay, Northwest Argentina and Southwestern Colombia.
