Leek broth, or cawl cennin in Welsh, is more substantial than its name suggests. A chicken stock base is enriched with oatmeal, bacon, potatoes, carrots, cabbage, and generous amounts of leek, making it a filling dish. The leek is a national symbol in Wales, and it is traditional to serve leek broth on March 1, to honor Saint David, the patron saint of Wales.
