Guiling jelly is a sweet dim sum dessert made with a cornstarch-thickened jelly of herbs, often including ginseng, honeysuckle, and chrysanthemum, sweetened with honey or sugar, which is also used as a medicine. It is a specialty of Guangxi and Guangdong. Traditionally, it was made with the bottom plate of the golden coin turtle, but this ingredient is now often omitted due to its expense.
