Grand-pères au sirop d'érable, or simply Grand-pères (French, "grandfathers"), are a traditional pastry in Québécois and Acadian cuisine. The term pépère is also used to describe this dish in some regions of Quebec like Beauce. They are made by placing a ball of an enriched baking-powder batter into boiling maple syrup, or, alternatively, brown sugar. The pastry is commonly served at sugar shacks in Quebec during the syrup production months.
