Made primarily from gongura (Hibiscus sabdariffa var. rubra) leaves, which impart a distinctive sour flavor, the chutney typically includes additional ingredients such as dried red chilies, garlic, cumin seeds, and occasionally green chilies. Note that "red sorrel" in this case does not refer to sheep's sorrel; gongura is not closely related to the European sorrel family.
