Duò jiāo (剁椒), is a popular ingredient in Hunan cuisine, used to add flavor and color to many dishes. It is made by chopping red chiles and placing them in a brine solution. The heat level is quite variable and differs by brand.
Duo jiao is a key ingredient in numerous Hunan dishes, especially duò jiāo zhēng yú, steamed fish head in chili sauce, and duò jiāo chǎo dàn, scrambled eggs with chopped chili.
