Chow mein noodles are a Chinese-American crunchy cracker, called mein gon in Chinese, which are used as a garnish on American chow mein dishes. Note that they are not usually the actually noodles used in Americanized chow mein, which are usually a thin wheat noodle something like that used in lo mein.
