The cashew apple, or cashew fruit, is the fruit of the cashew nut tree. It is actually the fleshy stem of the cashew fruit, which the cashew nut hangs from.
When mature, it can be eaten fresh, cooked for curries, or fermented into alcohol or vinegar. In South America, it is used to flavor drinks. The juice is cashew fruit juice, also called agua de marañon.
In Panama, the fruit is cooked down with water and sugar to produce dulce de marañón.
In the Indian state of Goa, cashew apple juice is fermented and double-distilled to produce a spirit called feni.
