Carbonation is the process of dissolving carbon dioxide (CO<sub>2</sub>) into a liquid, which gives it effervescence or fizz. To allow carbonated liquids to keep their effervescence during storage, they are typically bottled under pressure. Because carbon dioxide is only weakly soluble in water, a decrease in pressure causes the gas to leave solution as small bubbles, which appear in the drink and rise to the surface.
