Bløtekake, or bløtkake, is a Norwegian cream cake. It is typically made with layers of sukkerbrød (a light pound cake), whipped cream or custard, and fresh or preserved fruit or berries. The cake is always topped with whipped cream and often a garnish which indicates what ingredients have been used as the filling; icing is not typically used.
It is a celebration cake, served at birthdays or Constitution Day (Syttende mai).
It is essential identical to the Swedish gräddtårta, Danish lagkage and Finnish täytekakku.
