Blanco tequila, also known as silver or white tequila, is a clear, unaged spirit produced from 100% blue agave or a minimum of 51% agave mixed with other sugars, typically distilled immediately or rested for no more than two months in stainless steel or neutral oak containers. In production, cooked agave is crushed to extract juice (most often using roller mills or traditional tahona stones), fermented, and then distilled.
Unlike reposado and aƱejo tequilas, which are aged in wood barrels to develop additional flavors and color, blanco tequila is unaged and features the flavors of the agave plant. It often features crisp vegetal notes, along with peppery, citrusy, and slightly herbal flavors, with a pronounced earthy quality and a clean, sharp finish.
