Birch oil is the essential oil of the birch tree, usually extracted from the sap of the black birch, though in earlier times it was also made by boiling birch bark. It is used to flavor birch beer.
Birch oil contains high levels of methyl salicylate, which gives the oil a very strong wintergreen flavor.
