Bikaneri bhujia, or just bhujia, is an Indian snack made primarily from moth bean flour and gram flour, seasoned with a blend of spices including salt, red chili, black pepper, and cardamom. A thick dough is made and then extruded into fine, crisp noodle-like strands, which are deep-fried to yield a light yellow color and a distinctive crunchy texture.
