To bard a food means to cover a piece of meat, poultry, game, or fish with slices of bacon, fat, or pork. It is intended to protect delicate parts of the meat from the heat of an oven, and is typically removed after cooking. Game birds were sometimes served with the barding. Contrast with larding a piece of meat, which injects the fat into the meat instead of applying it to the surface.
