Arracacha, also racacha, apio, apio criollo, virraca, zanahoria blanca, mandioquinha, or batata-baroa, is a root vegetable from the Andes, which is grown for its starchy taproot. It can be eaten raw, or cooked to develop a flavor near celery, cabbage, and roasted chestnuts. It can be boiled and whipped into a purée, formed into dumplings, creamed into soups, fried into chips, or ground into flour.
